  3. 3 eggs, separated, at room temperature

  1. Melt the chocolate, butter and 60ml (1 u20444 cup) cream in a large heatproof bowl over a saucepan of simmering water. Set aside for 5 minutes to cool slightly.

  6. Fold half the egg white into the chocolate mixture. Fold in remaining egg white. Divide among 6 glasses. Cover. Place in the fridge for 3 hours to set.
