  1. 10g (2 teaspoons) butter or margarine
  2. 25g (1/3 cup) flaked almonds
  3. 200g fresh ricotta
  4. 1 tablespoon honey
  5. 1/4 teaspoon ground nutmeg
  6. 3 carambolas (star fruit), cut into 5mm-thick slices

  1. Heat the butter or margarine in a small frying pan over medium heat and cook the flaked almonds, stirring constantly, for 1-2 minutes or until golden. Drain on paper towel.
  2. Place the ricotta, honey and nutmeg into a small bowl and beat with electric beaters until smooth and creamy. Gently fold through the flaked almonds. Place the carambola (star fruit) slices on serving plates and top with the ricotta mixture.
